Base Recipe:

  • 1 large ripe banana (the spottier, the sweeter!)
  • ½ cup oat flour (or whole wheat flour; see notes for DIY oat flour)
  • 1 large egg (or 1 flax egg: 1 tbsp ground flaxseed + 3 tbsp water)
  • ¼ cup milk (breast milk, formula, or unsweetened almond/oat milk)
  • ½ tsp baking powder
  • 1 tsp melted coconut oil (or unsalted butter)
  • ¼ tsp cinnamon (optional)

Optional Add-Ins:

  • 1 tbsp chia seeds or ground flaxseeds
  • 2 tbsp mashed blueberries or grated apple
  • ¼ tsp vanilla extract

Instructions

Step 1: Prepare the Batter

  1. Mash the banana in a medium bowl until smooth with no lumps.
  2. Whisk in the egg (or flax egg) and milk until fully combined.
  3. Add dry ingredients – Gently fold in oat flour, baking powder, and cinnamon. Mix until just combined; avoid overmixing.
  4. Stir in add-ins like chia seeds, blueberries, or grated apple if using.

Step 2: Cook the Pancakes

  1. Heat a non-stick skillet over low-medium heat and lightly grease with coconut oil or butter.
  2. Scoop batter – Drop 1-tbsp portions onto the skillet, forming small 2-inch pancakes.
  3. Cook for 1–2 minutes until bubbles form on the surface, then flip and cook for another 1–2 minutes until golden brown.
  4. Let cool slightly before serving to avoid burns.

Step 3: Serve and Enjoy

  • For BLW – Cut into thin strips (6–9 months) or small cubes (9+ months).
  • Serve plain or with toppings – Add unsweetened yogurt, mashed fruit, or nut butter (avoid honey for babies under 1).
