Description

This easy tomato soup is the perfect cozy meal for busy weeknights or anytime you need a comforting pick-me-up. With simple pantry ingredients and minimal prep, it delivers a rich tomato flavor and a velvety texture. You can keep it classic or customize it with extra cream, fresh herbs, or a sprinkle of cheese. It’s a versatile soup that’s both satisfying and budget-friendly—ideal for anyone craving warmth in a bowl.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 can (28 ounces) whole tomatoes (including juices)
  • 2 cups vegetable broth (or chicken broth if preferred)
  • 1 teaspoon sugar (optional, to balance acidity)
  • Salt and pepper to taste
  • (Optional) ½ cup heavy cream or coconut milk for extra creaminess
  • (Optional) Handful of fresh basil leaves, chopped

Instructions

Sauté Aromatics

  • Warm the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook for about 5 minutes, stirring regularly until the onion becomes soft.
  • Stir in the minced garlic and cook for another 30 seconds, just until fragrant.

Add Tomato Paste

  • Stir the tomato paste into the onions and garlic.
  • Allow it to cook for 1 to 2 minutes, letting the flavors deepen.

Incorporate Tomatoes and Broth

  • Pour in the whole tomatoes (with their juices).
  • Use a spoon to gently break up the tomatoes for easier blending later.
  • Stir in the vegetable broth, and add the sugar if you’d like to balance the tomato acidity.

Season and Simmer

  • Sprinkle in a little salt and pepper.
  • Bring the soup to a gentle boil, then reduce the heat to low.
  • Let it simmer uncovered for 15 to 20 minutes, allowing the flavors to meld.

Blend and Adjust

  • For a smooth soup, use an immersion blender directly in the pot. Alternatively, let the soup cool slightly and blend it in batches in a regular blender.
  • Taste and adjust salt, pepper, or sugar if needed.
  • Finish with Cream (Optional)
  • If you prefer a creamier texture, stir in the heavy cream or coconut milk. Warm through for a couple of minutes without boiling.
  • Stir in fresh basil at the end for a burst of herbal freshness.

Serve and Enjoy

  • Ladle the soup into bowls.
  • Top with extra basil, grated cheese, or croutons if desired.
  • Serve immediately alongside your favorite bread or sandwich.

Notes

  • Fresh Tomatoes: You can replace canned tomatoes with an equal amount of peeled, ripe fresh tomatoes when they are in season.
  • Texture Control: If you like a chunkier soup, blend only part of it and leave the rest as-is.
  • Freezer-Friendly: Cool the soup completely, then store it in airtight containers or freezer bags for up to three months.
  • Dairy-Free Option: Skip the heavy cream and use coconut milk or leave it out altogether.
